The idea

One oven will be built on a London canal boat the second will be moved by a London Taxi.

The impact of our new design will be an oven that is more efficient in
• heat capture and store
• fuel use
• producing less emissions

The oven will be
• tested on bakers
• draw on engineering expertise from the Aprovecho Research Centre
• suitable for community and commercial use
• sustain baking temperatures
• fully tested and ISO certified before going to market

Why it's a great idea

We have build over 30 community ovens since 2008. We now want to offer community a portable version for occasional use and one that is tested to a higher specification, is ISO tested and suitable for commercial use.
The portable oven is an integral part of an long term goal to generate employment opportunities from its build and use by mud masons and chefs. We will work initially with the repeat offending youth market.

The oven will be available for use at festivals and events for community to fundraise and make use of London's canals and the iconic London taxi to celebrate London and the 45 million year old clay that sits beneath our streets.

Steps to get it done

  • Contact local press and community groups and our database via our newsletter and social media
  • De-construct then re-conconstruct portable oven on Gaia Gallery
  • Test 2d designs with artisan bakers and work with 3D clay designs to modify our blueprints
  • Build first test model aboard the Gaia Gallery
  • Conduct temperature, heat storing properties of the design, monitor fuel use and times for oven to come to temperature
  • Run first of a series of workshops on cooking with our new design and record the lessons
  • Run first of a series of workshops on oven building and record lessons
  • Work with the Aprovecho institute to modify, improve our design(s)

Our work will draw on the expertise of master bakers, cob mason, heating engineers, education and training specialists.
