We want to reimagine how food works in Walsall, starting in our creative studio space and working with local organisations such as Urban Hax, Flo’s Kitchen and Vegan Vybez to connect and share the local heritage hidden in food and growing practices. Jikoni Lab will encourage Walsall to look more closely at our circular economy; take food quality and food waste more seriously; engage more in healthy eating; learn more about sustainable farming practices; and share knowledge, heritage, and experiences, through food education and family fun experiences. Jikoni is the Swahili word for ‘kitchen’. ‘Jikoni’, represents the cosmology of cultures the contribute to the makeup of the East-African home. As in traditional Swahili culture, Jikoni echos a melting pot of identities that ultimately converge to create grounding, wholesome and love-rich food. Jikoni Lab will consist of: + Community Kitchen, Restaurant & Garden + Scientific Grow Labs + Workshop Rooms

What we'll deliver:

  • Furnish and revamp the Jikoni Lab building
  • Fit out and install a new kitchen
  • Install a new boiler & radiators

Why it's a great idea:

We are asking for £13,855 to build the community kitchen/restaurant and garden element of the project. We will transform 1200 sq ft, to create a space for people of all ages and backgrounds to learn, grow, eat and connect. Jikoni Lab aims to launch in March 2022 as part of our Walsall Studio next spring. It will include: + A brand new vegan street food and vegan bakery on Walsall highstreet + A community kitchen space which will be used for workshops, competitions, lessons and masterclasses + A community garden for planting, growing edible plants and micro greens + A community spice cupboard & seed bank for people to share seasonings and household recipes Our Programme will include: + STEAM workshops combining art, science, design and plant growing + Community cooking masterclasses, competitions and food therapy + A monthly microgreens subscription for local food businesses and families to enjoy freshly grown produce grown at our Studio.

Once the restaurant and community garden spaces are up and running, we plan to invest in the grow labs and dedicated workshop rooms. The grow labs will provide a controlled environment for growing specific types of climate-sensitive produce and the workshops will further develop our community by not only teaching us how to grow our own produce but to also cook nutritious food and compose of their waste effectively to champion a circular economy. If our project reaches overfunding, the funds donated will be applied to bringing these project elements to life. The community can be instrumental in revisioning Walsall. We would like to invite the people of Walsall to co-build our Food Lab with us. Overfunding

This project is enabled for overfunding. If the project hits its funding goal before the end of the campaign period, any extra funds raised will be spent (in order of priority) on:

  • Buy Extra Seeds, Plants & Trees
  • Develop the Community Garden & Dedicated Lab Spaces
